Finca Bethania was founded in 1991 in the heart of one of the best know coffee regions of Nicaragua. Its management philosophy is deeply rooted in four generations of coffee growers. Nowadays are Martha and Ana Maria Albir (or Doña Martha and Doña Ana) and their team who runs the farm. Farming in balance with the soil, and the fauna and flora in and around Finca Bethania is a key focal point.
This Catimor coffee was harvested by selective manual picking before being pulped at the wet mill located at the farm. The coffee fermented for 36 hours in tanks before being washed in traditional washing canals. After, the coffee was dried on raised beds for 17 days at the ‘Cafetos de Segovia’ dry mill.
